Baked Banana Nut Oatmeal

So every morning I wake up I have this battle in my head about what's for breakfast?
If it were up to me, I'd only have green tea. 
Straight. 
No Frills. 
Yeah. I know. 
I can be pretty hardcore in the mornings.
But according to everything I read & my super concerned fiancé,
 I'm supposed to eat something before noon. 
Pfft. Fine.

Cut to me standing in front of my pantry for about an hour looking at all of the things that have been forgotten & potentially may go bad in another day or two,
& pondering if eating chips at 7 am qualifies as breakfast & whether I will ever be into the 5 gallon protein shake powder I bought last year...
Then after about 20 minutes of that, I usually promise myself I will finally stop wasting food when there are starving children in ________ & try to figure out what to do with todays' saddest-almost-dangerous-food in my kitchen.

So of course I just had to make:

Baked Banana Nut Oatmeal

This is a really easy one-bowl recipe that uses a lot of what you may already have in your kitchen.  It's pretty healthy for you if you use Splenda brown sugar vs regular brown sugar & 1% milk instead of whole milk.  
It tastes a little like a cross between banana bread & an oatmeal bar.  It's warm & extra delicious with a little extra milk (or cream if your motto is calorie shmalorie) & even more bananas & walnuts sprinkled on top.  
I've even heard of some making it the night before & eating it cold...
I don't know why but do whatever tickles your pickle. 
It's your world.
I just live in it.

This will be a short tutorial because it was 7am in the morning & I don't know about you, but taking lots of photos, lots of dirty dishes & a long, difficult recipe will just make me say "forget this" & go get a breakfast burrito. 

Let's get this started:
Get a bowl. 
Mash your bananas in it with a fork...or your hands if this is only for you. 
Otherwise, so us all a favor & use a fork or something smashy. (I should have smashed them in the mixing bowl but I was really just way too half-asleep to use common sense. 

Then whisk together the bananas, egg, sugar, baking powder, cinnamon, allspice, salt & vanilla.  

Then mix in the oatmeal & walnuts.

Now the milk... 
Done.

Pour this all into a prepared 8X8 dish & sprinkle with more walnuts.
 I used a 7X11 because it was clean & within reach...  
Did I mention it was 7am?

Put foil over the oatmeal & bake for 30 minutes. Remove foil, continue baking for 5-10 minutes or until the oatmeal is firm to touch in the center.
Boom.  
(Well, not really "boom" since it took 45 minutes but go walk your dog or something else that takes about 30 minutes.
When it's done, you can kind of see how the oatmeal is soft but slightly firm. 

Break up & scoop oatmeal into a bowl, pour a little milk or cream over it if you want it more like a cereal.  Top with extra banana slices, fresh fruit or walnuts.

Baked Banana Nut Oatmeal
serves 4


Ingredients:
  • 3 medium bananas, ripe & smashed (about 1 1/2 cups)
  • 1 1/2 cups oatmeal (I used Coach's Oats but any old fashioned oats will work)
  • 1/4 cup brown sugar (You can substitute Splenda Brown Sugar)
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 cup milk (I used 1% and it was fine)
  • 1/2 cup chopped walnuts
  • Toppings as desired:
    • chopped walnuts, berries, bananas, honey, agave, milk/heavy cream
Directions:
  • Grease a small baking pan/dish with non-stick spray (I used a 7x11 but you can use a 8x8 with the same results).  Pre-heat oven to 350 F.
  • Mash bananas well with the back of a fork in a medium bowl.  In the same bowl add cinnamon, allspice, egg, vanilla, salt & baking powder. Whisk to combine.
  • Mix in the oats, walnuts & milk. Stir to combine.
  • Pour into prepared dish.  Cover with foil & place on center rack of oven.
  • Bake for 30  - 45 minutes depending on the type of pan you used. 
  • Let cool for 5 minutes.  If making ahead, allow oatmeal to cool, cover with plastic wrap and enjoy cold the next morning or reheat in the microwave before adding toppings.
  • Break up & spoon oatmeal into a bowl. Top with milk or heavy cream, walnuts & any other goodies you think would make this delicious!

    1. I think it would be fine. It may taste a little bland if you don't use any sweetener at all. You can try honey, agave syrup, brown sugar Splenda, or your favorite everyday sweetener & that should work just fine :) Let me know what you end up using! I'd love to hear how it turns out!

  2. Delicious!!! I was a little naughty though and snuck in a few chocolate chips, hehe! Definitely a recipe we'll be using often :)
